CSA Week 1: A little late edition
Strawberries (two quarts!)
Sorry this is a little late. Netroots screwed with my schedule. But here it is: week one of the CSA!
I used this recipe, but with strawberries instead of raspberries. Since I don’t have an electric mixer, I experimented with my minichopper to whip the butter and sugar. This proved successful. (Non-pro tip!) Took it to a party.
First I made black beans, polenta, and veggies. The idea was to use up as many veggies as possible because we were leaving town on Wednesday for Netroots Nation. So I made polenta in the oven, which I prefer to the stovetop method. Then, using this recipe as a base, I cooked up the broccoli rabe, green onions, bok choy, and snow peas with the black beans.
I used some of the strawberries (we had a TON) in a very basic strawberry salad with a balsamic vinaigrette. Usually, you would make it with arugula or spinach, but I had red leaf lettuce, so I used that instead.
Served dessert with more strawberries. I just made some vanilla pudding from the box and served that with strawberries.
To use up the last of the vegetables, I made this warm radish and asparagus salad, but added a cup of warm barley for good measure. Made this kidney bean spread recipe. Used it as a spread to make sandwiches (with a mind towards using up my bread before it went stale).
Made a cold salad with the leftover lettuce and some tomato. Dessert was what was left of the pudding and strawberries.
